I'm afraid that won't be possible. Your site needs to be publicly accessible to be able to activate Jetpack and all the features that require a WordPress.com connection, like Stats.
I would suggest that you try to use another Stats solution that does not rely on a third part service, where stats are stored and calculated on your own server. WP-Stats is a good example:
